RIPA D'ORCIA - Orcia Denominazione di Origine Controllata

Winery Location : Loc. Ripa d’Orcia – Castiglione d’Orcia (Si). - Vineyard Location : 300 m. a.s.l..; SouthWest exposure.

Grapes’ varieties : Sangiovese (60%) Cabernet Sauvignon (30%) and Merlot ( 10%).

Training System
: cordon trained, spur pruned

N° of vines per hectare : 4000. -

Harvest
: Beginning (Merlot) and end of September (other grapes).

Production Technique :
Selected grapes are fermented in stainsteel vats with controlled temperature. During each stage of production, from fermentation to ageing, the different varieties of grapes are kept separate as to ensure the widest possible range of characterisation of the wines. The wines are aged in big oaks (sangiovese) and oak barrels (french grapes) for some months and finally kept in bottles for further maturation.

Bottling : 15 months after the vintage.

Description : The Castello di Ripa d’Orcia is a full-bodied wine with a deep ruby colour, rich with spicy and fruity aromas. It has a very elegant suppleness.

Producer’s Advices : Perfect with roasted meats, matured cheese. Open one hour before and serve at a temperature of 18°.
