Grape varieties : Primarily Trebbiano

Training System : cordon trained, spur pruned.

N° of vines per hectare : 4000.

Harvest : During the second half of September.

Production Technique : Selected well-riped grapes are hung to the “penzane” until the grape is dry and the skins browned. During the rigid days of December the grapes are pressed softly so to obtain the must. It is then poured into 50-100 liter oak casks (caratelli) where it starts a long and slow alcoholic fermentation.

Ageing : The barrels are stored in a ambience with strong changes of temperatures and a good ventilation. They are kept almost full and sealed for a minimum of three years.

Bottling : After a clever evaluation of the Owner, Vinsanto is ready for bottling.

Description : Amber in colour with orange nuances. To the palate it is soft, warm and flowing. Honeysuckle nose and a full rich combination of flavours.

Producer’s Advices : Sweet and complex this wine is very good with chunks of medium-aged Pecorino, excellent as an aperitif with foie gras.

Production :  limited number of bottles.
